INGREDIENTS
· 1 ½ cup of sliced almonds
· 3 tablespoons of all-purpose flour
· ½ teaspoon of vanilla extract
· 2 tablespoons of heavy cream
· ¼ teaspoon of salt
· ¾ cup of white sugar
· 2 tablespoons of light corn syrup
· 5 tablespoons of unsalted butter
· ½ cup of semi-sweet chocolate chips (or white chocolate chips)
HOW TO MAKE
Step 1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
Step 2. Blends the almonds in a food processor until finely chopped. In a large bowl, mix the almonds, flour and salt together.
Step 3. In a small saucepan, combine the sugar, cream, corn syrup, and butter. Cook over medium heat, stirring occasionally, until the mixture reaches a rolling boil and the sugar has fully dissolved. Let it boil for 1 minute.
Step 4. Remove the saucepan from the heat, stir in the vanilla, and pour the mixture into the almond-flour blend. Mix until well combined, then refrigerate for about 30 minutes to cool.
Step 5. Scoop rounded teaspoons of dough and roll them into small balls. Place them on the prepared baking sheet and space them 3 to 4 inches apart. The cookies will spread during baking.
Step 6. Bake the cookies one sheet at a time for about 10 minutes, until they are thin and evenly golden brown. Let them cool on the baking sheet for 5 minutes before transferring to a cooling rack. Repeat with the remaining dough.
Step 7. Melt the white chocolate in a microwave-safe bowl, heating in 30-second intervals and stirring until smooth. Pair cookies of similar size, spread chocolate on one side and gently press another cookie on top to make a sandwich. Let the chocolate set, then store the cookies in a container.
